Acetaldehyde can form during yeast fermentation or during maturation. Its presence is corrected by addition of sulfur dioxide. The Acetaldehyde Assay Kit has a reaction time of 4 min. Each kit contains reagents for 50 tests using a standard manual spectrophotometer, 100 tests using the MegaQuant™ Wave, or 500 tests using an auto-analyzer or microplate reader. All reagents are stable for >2 years.
